Tortilla Pizza Recipe

Midwest Dairy and registered dietitian Ariel Johnston of The Tasty Balance brought you sMOOthies and muffins – and now they’re back with a demonstration of tortilla pizza! This recipe builds on kids' kitchen skills with more chopping, grating and stove top learning. Who doesn’t love sharing a slice together?!

Ingredients

  • Whole wheat tortillas
  • Mozzarella cheese, grated
  • Tomato sauce
  • Sun-dried tomatoes
  • Cherry tomatoes, cut into quarters
  • Spinach
  • Italian herb seasoning
  • 1-2 tablespoons olive oil
  • Salt
  • Pepper
  • 5 oz. chicken breast, cut into 1-inch squares

Directions

  1. Preheat oven to 420 degrees.
  2. Heat olive oil in pan. Add chicken and cook until browned and internal temperature is at least 165 degrees.
  3. Lay whole wheat tortillas on a baking sheet. Spread a thin layer of tomato sauce on the tortillas. Sprinkle mozzarella cheese over the sauce. Add the cooked chicken, cherry tomatoes, sundried tomatoes and spinach. Depending on your taste, add vegetables you enjoy such as bell peppers, red onions, olives or mushrooms. Get creative! Sprinkle more mozzarella cheese on top.
  4. Bake for 6 to 8 minutes until cheese melts, spinach wilts and tortillas turn a nice, golden brown.
  5. Let cool for 5 to 10 minutes. Cut into quarters and enjoy!
